Polo Star Nacho Figueras Brings Argentinian Elegance to Palm Beach Cuisine Palm Beach has never been short on places to see and be seen, but this season, the island gains a destination that speaks less to spectacle and more to soul. Its debut in December 2025 coincided beautifully with winter’s most glamorous months. The Polo Room Palm Beach arrived as an elegant new chapter in the island’s dining story , one shaped by heritage, hospitality , and the unmistakable charisma of international polo star Nacho Figueras. Located at 251 Sunrise Avenue, The Polo Room Palm Beach is attuned to its surroundings, merging elegant atmosphere with refined flavors…key to Palm Beach living. Inside, the space unfolds with understated luxury. Rich textures, warm tones, and equestrian-inspired details create a setting that feels timeless rather than themed. Custom design elements nod to the heritage of polo while embracing the effortless glamour long associated with Palm Beach. Adding depth and authenticity, the restaurant features a curated art installation created in partnership with renowned photographer Ricardo Motran, known as “Snoopy.” His photographs capture iconic Palm Beach polo moments from the eighties and nineties, offering a visual narrative that connects the past to the present. From handcrafted empanadas to raw bar selections, standout dishes include the East and West Coast Oysters (with champagne mignonette, cocktail sauce, and lemon) alongside delicately prepared crudos like the Big Eye Tuna Tartare with avocado, ponzu vinaigrette, and potato chips and the Polo Room Ceviche Salad with Mediterranean seabass, radicchio, endives, and jalapeños. Seasonal salads include the Florida Citrus Arugula and Fennel Salad (with cherry balsamic, Sicilian pistachio, and pomegranate, as well as the Polo Waldorf with bacon, creamy blue cheese, apple, celery, figs, and candied walnuts. The full Raw Bar at The Polo Room Palm Beach Pastas are made in-house. Dishes like the Black Truffle Spaghetti (with pecorino and shaved black truffle) anchor the menu, while entrées such as Lobster Frites, served with bearnaise and hand-cut fries, set a tone of classic indulgence. The grill takes center stage with an array of steaks that range from Wagyu cuts to prime cuts, 36 oz porterhouses and 24 oz ribeyes. The move introduced Brunello di Montalcino DOCG into Il Borro’s expanding wine portfolio, marking a defining moment for the Ferruccio Ferragamo family’s viticultural vision. Montalcino is no ordinary addition. Revered for producing iconic Brunello wine, the hilltop territory represents discipline, longevity, and an uncompromising relationship between soil and time. With Tenuta Pinino, Il Borro does not simply broaden its offerings; it enters a dialogue with one of Tuscany’s most storied terroirs. The estate encompasses 21 hectares, of which 16.24 hectares are planted with vines. The vineyards are carefully divided among 7.67 hectares of Brunello di Montalcino, 5.42 hectares of Rosso di Montalcino, and 3.15 hectares of Sant’Antimo Sangiovese, a composition that reflects both prestige and versatility. The acquisition brings approximately 80,000 bottles annually into Il Borro Wines’ production, with Brunello forming the cornerstone of this new chapter. Prior to the Montalcino expansion, Il Borro’s vineyards covered 84 hectares and produced wines celebrated for their elegance, structure, and respect for the land.
